Henri Boillot Burgundy 2015

The Boillots have been farming in Burgundy since 1885. The sheer quality of Domaine Boillot wines, including the impressive and exclusive Les Mouchères monopole, is testimony to the assiduous work they have done in both the vineyards and cellar.

Henri Boillot harvested very early in 2015, beginning on August 25 and picking only during the morning hours "to retain freshness." He considers the vintage "classic and not atypical," noting that the growing season featured less extreme heat and fewer sunburned grapes than either 2009 or 2005. "And the rains were perfectly timed," he added.

2015 is a "vintage that was easy to manage as we made only six treatments that entire season as opposed to the 9 to 15 we usually make. We chose to begin picking the whites on the 26th of August and then picked the reds from the 1st to the 7th of September. The fruit was strikingly clean and quite ripe yet not overly so as we are very conscious of the acid levels in our wines."
