Domaine Nathalie & Gilles Fèvre Chablis

The Fèvre family has tilled the chalky soils of Chablis since before the French Revolution dating all the way back to 1745. Each generation has increased the family holdings, and the domaine now encompasses almost 50 acres from parcels situated beside the village of Fontenay-Près-Chablis, at the very heart of Chablis' vineyards. They have 36 acres of prime parcels in Grand Cru and 1er Cru vineyards which sit on high plains and steep hills grown on stony Kimmeridgien limestone soils. Before 2004, the fruit of the Fèvre’s labor has been sold to La Chablisienne, including grapes from the family’s prized parcels in the Grand Cru Les Preuses and 1er Cru Fourchaume & Vaulorent.

Gilles takes a natural approach in tending the vineyards, employing bio-friendly alternatives to chemical herbicides and pesticides. And Nathalie now focuses her winemaking talents solely on the family’s grapes. Nathalie, Gilles and their daughter, Julie, announced their choice to convert all their vines to organic by the end of 2021. With about fifty hectares, the estate will then become the largest producer in the Chablis wine region to be 100% organic. The new modest, but state-of-the-art winery is equipped with a pneumatic press, 20 stainless steel tanks and chais for aging.

2018 is a great Chablis vintage
Winemakers across the region are thrilled with how the 2018 wines are developing so far. Louis Fabrice Latour, stated “We are very pleased to have two big crops in a row of very good quality.” Some Burgundians, like négociant Philippe Pacalet, have even compared the 2018 vintage to 1947 – one of the top Burgundy Vintages in history.
