Jean-Marc Pavelot Savigny-lès-Beaune, 2018

We have finally managed to land all Six Premier Cru Savigny-lès-Beaunes of Jean-Hugues Pavelot - which makes for a fabulous mixed 6-pack offer - showcasing his special vineyard holdings and emphasis on terroir expressive wines. 

This is a superb offering from this great Domaine – considered by most critics to be the best producer in Savigny-lès-Beaune. These 2018 vintage releases are all generous, balanced and built-to-age while they also offer considerable bang-for-your-buck - which is not something you could say very often about wines from the haloed slopes of Burgundy.

The Pavelots have been cultivating vines in Savigny-lès-Beaune just before the French revolution and have made some of the best wines in the village since. The domaine’s flagship, La Dominode, is powerfully structured wine from the south hill of Savigny. This wine aside, the Pavelots make traditionally pure and classic Burgundy. Their large range of vineyards have produced lacy, delicate and well priced Burgundy one usually associates with Savigny, like Serpentières and Peuillets, as well as hugely structured, gravelly, and age-worthy monuments like Gravains, Guettes and Dominode. If you have interest in wines that taste of history and tradition, this is a must taste estate for you.

"Pavelot has been one of my go-to names in Savigny-lès-Beaune for several years now. They have consistently produced excellent Savignys despite the misfortune that the appellation has suffered in recent years. Jean-Hugues Pavelot, on this occasion accompanied by his father, took me through their range of 2018 domaine wines, plus his négociant range under his own name. All the wines had just been racked and blended. "Started picking end August for the whites, and the reds at the beginning of September with good yields, at around 40hl/ha. What was important for me was to keep the identity of Pinot Noir. I used between 15% and 30% whole bunch fruit across the range. This was important in order to preserve their freshness. The wines are mostly between 13.5% and 14% alcohol. Will be bottle just before Christmas between February and March."
